Deliciously grilled chicken spiedies on a pizza with Alfredo sauce, onions, red peppers. Add some spinach and mushrooms for some real excitement.
If your pizza dough is refrigerated, set out at room temperature for about a half hour.
If cooking in the oven, preheat to 450 degrees F. If cooking on the grill or in a Dutch oven, prepare the coals. For grilling the pizza, make sure you have enough coals to get the grill up to 450 degrees F and place the coals on one side of the grill.
Slice the zucchini into thin slices and set aside. Then chop the red pepper, onion, green onion and set aside.
Chopped the grilled chicken spiedies into 1/4 to 1/2 inch chunks and set aside.
Oil the cast iron skillet or Dutch oven.
If the dough is store bought, remove it from the bag. Place dough on floured surface and crush the dough to remove air bubbles. Roll out the dough till just bigger than the cast iron pan. Place dough in the pan and bring up the sides about a half of an inch.
Evenly spread about a half to a whole cup of Alfredo sauce on the dough. Exactly how much depends on your preference.
Sprinkle a small amount of mozzarella cheese on the sauce. This will help to bind the ingredients.
Sprinkle chopped onions, chopped red peppers, and chicken on the pie.
Place slices of zucchini on top and sprinkle with about 2 tablespoons of parmesan or asiago cheese. Sprinkle the rest of the mozzarella cheese on the pie.
Place the pie in the oven for 15 to 20 minutes. Check for doneness at 15 minutes. The pizza is done when the cheese has melted and the crust is just brown.
If cooking in a 12-inch Dutch oven, place 23 coals on top and 11 on the bottom. Bake for 15 minutes and check for doneness. The pizza is done when the cheese has melted and the crust is just brown.
If cooking on the grill, make sure the grill is preheated to 450 degrees F and place as far away from the coals as possible. Shut the lid and check after ten minutes, turn the pizza half way and cook longer if needed.
Spiedies take at least 24 hours to marinate so if you plan to make this recipe with fresh spiedies, plan well in advance. I marinated these for about 3 days. The flavor is more intense when they are fresh.
