Healthy Caprese Salad
Healthy Caprese salad is such a tasty way to include a healthy salad in your outdoor cooking. There are several ways to make Caprese salad, this is one of my favorites. Healthy Caprese salad is so simple and makes the perfect summertime dish when the weather is hot and you don’t want to spend hours over hot flames. You can serve this either as a salad or as an appetizer.
A Great Recipe
Healthy Caprese salad is another great recipe my old roommate taught me. She also taught me the Drunken Shortcake recipe, which is absolutely delicious. She did this recipe with just the balsamic vinegar, however, I found that adding some olive oil, and a tiny bit of salt and pepper can really add a lot to the flavor of this dish. The method laid out in this recipe was how she originally served it. Thi can also be made into a salad by substituting the tomatoes for cherry tomatoes and the fresh mozzarella log for fresh mozzarella balls. Just cut the cherry tomatoes in half and mix all the ingredients together in a bowl. When I this style, I sometimes also add an avocado to the mixture. Adding the avocado is absolutely delicious!
There are no special tricks to making healthy Caprese salad other than using the freshest ingredients.You do not want to use dried basil, it must be fresh. You should also use a good quality balsamic vinegar and olive oil. I use olive oil often in my cooking so I always have some fresh stuff around. As for balsamic, while it can go bad, it usually stays good for a very long time. This works for me since I tend to use it only a handful of times per year.

Healthy Caprese Salad
Caprese salad is both delicious and nutritional. Make it as an appetizer or a great side dish for a flavorful experience everyone will love.
- 4 red on-the-vine tomatoes
- 1 pkg fresh mozzarella log
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 pkg fresh basil
- 1 large sliced or cubed avocado (optional)
Slice the tomato to about 1/4 inch thick and place on a platter or plate.
Slice the fresh mozzarella to about 1/4 inch thick and place on top of each tomato.
Sprinkle the balsamic vinegar over the fresh mozzarella and tomato.
Sprinkle with olive oil.
Lightly salt and pepper.
Chop up fresh basil and sprinkle over the tomatoes, or use one basil leave per slice.
Serve with your favorite grilled meat.
