What Is A Grilled Chicken Pizza
I addressed the question of what grilled chicken spiedies are in my first posting on the grilled chicken spiedie sandwich. So a grilled chicken spiedie pizza is just a pizza with grilled chicken spiedies as the main ingredient. When coming up with this recipe I wanted to make sure I used ingredients that would bring out the flavor of the spiedies so I used alfredo sauce as my sauce instead of a red sauce. I also used vegetables that would not overpower the spiedie flavor. Things like mushrooms, zucchini, spinach all work well for that goal. As for cheese, mozzarella of course, but a little asiago or parmesan adds a lot to the flavor.

To Grill Or Not To Grill?
Most noteworthy is the fact I grilled the pizza in a 12 inch cast iron skillet. Grilling pizza is a lot of fun in the summer and is a great way to keep the oven off in your home on those hot summer nights. While I have grilled pizza directly on the grill, I still prefer using a cast iron skillet no matter where I bake my pizza. It works fabulously in the oven, on the grill with indirect heat, and you can even add your Dutch oven lid and use it like a Dutch oven and put on some coals to bake the pizza. With that last method, you may want to check it a little more closely to make sure it does not burn since your oven volume is smaller.
Chicken Spiedie Sauce Recipe
Due to the amazing flavor, the sauce is just the marinade simmered for a few minutes. The marinade is the key to the whole dish. There is so much flavor packed into a spiedie that you can eat them as is and be blown away by the flavor. I find that adding some baby spinach, onions, and/or red peppers adds a lot to the sandwich or in this case the pizza. To make the sauce, just save the marinade after you have prepared to grill the spiedies. Then toss it in a saucepan and simmer for a few minutes. You need to cook the sauce since the raw chicken was in it. Then, let the sauce cool and you can add it to the sandwich, or in this case the pizza. You can find the marinade recipe here.
How To Make Grilled Chicken Spiedie Pizza
After I first made chicken spiedies, I started brainstorming things I could make with this tasty marinated piece of heaven. Because I love it so much, a pizza was the first thing to come to mind. I used some leftover spiedies to make this pizza. They freeze really well, however, the only problem with freezing cooked meat is it tends to dry out a bit. To tackle this problem, I froze a little of the sauce with the spiedies. Once they were thawed out, I cut up the spiedies and recoated them with a little of the sauce. I use an alfredo sauce for the pizza, first of all, because it’s my favorite, second because it goes so well with the spiedie sauce. To complement the flavors of this pizza, I decided to keep it simple, just some onions, zucchini, and red pepper. I made a second pizza with just onions.
Grilled Chicken Spiedie Pizza
Deliciously grilled chicken spiedies on a pizza with Alfredo sauce, onions, red peppers. Add some spinach and mushrooms for some real excitement.
- 1 pkg pizza dough (or make your own)
- 2 c mozzarella cheese
- 4 tbsp Alfredo sauce
- 1/2 c chopped onions
- 1/2 c chopped red pepper
- 1/2 c sliced zucchini
- 2 tbsp asiago or parmesan cheese
- 1/4 c thinly sliced green onion
If your pizza dough is refrigerated, set out at room temperature for about a half hour.
If cooking in the oven, preheat to 450 degrees F. If cooking on the grill or in a Dutch oven, prepare the coals. For grilling the pizza, make sure you have enough coals to get the grill up to 450 degrees F and place the coals on one side of the grill.
Slice the zucchini into thin slices and set aside. Then chop the red pepper, onion, green onion and set aside.
Chopped the grilled chicken spiedies into 1/4 to 1/2 inch chunks and set aside.
Oil the cast iron skillet or Dutch oven.
If the dough is store bought, remove it from the bag. Place dough on floured surface and crush the dough to remove air bubbles. Roll out the dough till just bigger than the cast iron pan. Place dough in the pan and bring up the sides about a half of an inch.
Evenly spread about a half to a whole cup of Alfredo sauce on the dough. Exactly how much depends on your preference.
Sprinkle a small amount of mozzarella cheese on the sauce. This will help to bind the ingredients.
Sprinkle chopped onions, chopped red peppers, and chicken on the pie.
Place slices of zucchini on top and sprinkle with about 2 tablespoons of parmesan or asiago cheese. Sprinkle the rest of the mozzarella cheese on the pie.
Place the pie in the oven for 15 to 20 minutes. Check for doneness at 15 minutes. The pizza is done when the cheese has melted and the crust is just brown.
If cooking in a 12-inch Dutch oven, place 23 coals on top and 11 on the bottom. Bake for 15 minutes and check for doneness. The pizza is done when the cheese has melted and the crust is just brown.
If cooking on the grill, make sure the grill is preheated to 450 degrees F and place as far away from the coals as possible. Shut the lid and check after ten minutes, turn the pizza half way and cook longer if needed.
Spiedies take at least 24 hours to marinate so if you plan to make this recipe with fresh spiedies, plan well in advance. I marinated these for about 3 days. The flavor is more intense when they are fresh.
